Traditionally, fish and chips come with side servings as well as chips. Garden peas are popular in restaurants while takeaways, especially in the North of England tend to opt for mushy or pureed peas. Regional specialities are common throughout the UK with Sheffield having the locally produced 'Hendersons Relish' as a popular garnish while Holyhead in Wales, Wigan and St Helens residents are used to a 'Pea Wet' or 'Peas Water' which is simply the juice of the cooked peas poured over the chips. In Hull chips are often served with 'chip spice' and who could forget the perennial side serving that you either love or hate, the pickled egg.
